Our pastrami and corned beef is made from scratch in a submersion brine with carefully measured amounts of salt and nitrites with a blend of herbs, garlic, and spices. Our pastrami is then given a coriander rub and smoked low and slow with Hickory wood. Our corned beef is slow roasted until it's tender enough to chew with your tongue.

Classic Pastrami

Homemade hickory smoked pastrami on reuben rye with brown mustard. It's amazeballs. Add cheese +2

Lean Cut

Coming from the flat section of the brisket. This has less marbling throughout giing you a mouthful of flavorful protein-packed ecstasy. I should write for Harlequin romance.  

Center Cut

Coming from the point section of the brisket. Also called the deckle. This cut has more marbling through the meat and it's so tender you can probably chew it with your tongue.

Remember Hot Pockets from back in the day? Well, mine are not full of processed garbage. Bits of pastrami and corned beef made into a hash with onions, potatoes, carrots, peas, swiss and cheddar cheese. All folded up in puff pastry and baked. Oh my freaking dog.... I’m seriously.
